I am curious if I purchase a DSP-5 tune, will I be able to do the deletes I need for my stand alone installation?
Also how about tuning out the hiss from the turbo?
Also where do you get your tunes from

If you do via the Autocal then only your tuner can make changes to the tune. If you get a V2/V3 then you can make your own tunes

Most tuners lock their tunes so you cant resell them or mod them. If you want what you want done, gotta make good friends with a tuner or do it yourself like Jason said with a v2/v3

I have a V2 but know very little about tuning
No better time to learn. Start reading every thread you can find on the subject.

You can also try out some of the tunes in the library. Just make sure to save your stock tune in multiple safe locations before making changes in case you need to revert back or start over

As others have said, you'll either need to work with a good tuner or learn how to tune it yourself. Unfortunately I can't help with the "learn" part of that.

Would it be practical to give the tuner my tune he/she could do the deletes?
Is the exhaust "hiss" tuned out of most tunes?

Nobody will be able to modify your tune that you have now as it should be locked. Even then, a quality/respectable tuner will not modify someone else's tune as that's simply bad practice.

On VGT trucks you can have hiss (closed vanes) or rumble (open vanes) idle positions, you just need to tell your tuner if you want rumble or hiss idle.
