Do I need a thicker head gasket or not?
Your heads will be fine. Ive taken double digits(.010 +) off without issue before. There is a spec for valve recession and piston protrusion. Measure those and decide on gasket thickness Sent from my SM-G990U2 using Tapatalk- ikeG

Any 7.3 OBS experience?

It's not so much diesels, but anything turbocharged. Even the newer, smaller displacement turbocharged engines I notice need air filters changed very frequently. This clogged k&n is out of a fleet silverado 6.6 gasser with 173k on it. Makes ya wonder just how many miles it's been in here to be...- ikeG
