Is it blowing black smoke when floored.

Start with cleaning the maf, check that the resonator plug hasn't popped out, did you accidentally turn the programmer to a smaller tune.

The factory tow package is rated at 7500 pounds towing and 1000 tongue weight. Its a wonder why they hold up at much as they do with how most people use them.

Dexcool is an organic acid coolant, the coating applied to the pipes might not be 100% immune from it over long term. The metal of the pipe shouldn't be affected.

I'd bet the frame has a slight twist to it. Try loosening one of the bed to frame mounting bolts at the rear of the truck and lift that corner slightly. See if it gets better.
