Default Engine Operating Temperatures

My water pump was leaking out of the weep hole so I replaced it and now I have noticed that the engine temperature varies quite a bit. Used to, it hold steady at 185, now it seems to vary. I have noticed it getting up close to 210. The temperature will go from 185 to almost 210 while I'm driving.

Anyone know why it varies like this? Also, what temp. should I be concerned about it getting too hot.

Thanks,

only a handful of miles since the replacement. I put the pump on Friday and noticed the temps varrying over this past weekend. I pulled the bolt that's on top of the housing when I filled the coolant up. This should allow "most" of the air to escape, but I am sure there are more air pockets in it. I am hoping that's what it is and it will all eventually bleed out. Is there another way to bleed the system?

in the winter my truck runs at 185 and in the summer the needle never leaves 210

as long as it doesnt go over 210 you should be fine
